I was looking for a dish to accompany my Macaroni and Cheddar Cheese which I was cooking the other day. A salad came to mind, so plus the fact that my husband LOVES tomatoes, so I was looking for a tomato salad :-). I love cooking salad and have always done balsamic vinegarettes with lemon, garlic, wine, etc. When I came across this recipe, I was amazed that it doesn't contain any vinegar, lemon, garlic or wine!! So how did it turn out...??

Wow! What can I say about this salad, it is FABULOUS! I love the combination of the herbs mix with the tomatoes and the taste is just so refreshing. I didn’t use a lot of salt in it because the herbs and olive oil dressing already give enough of compliments to the tomatoes salad. This is the healthiest way to eat your salad.

When my husband was munching on the tomatoes he didn't even realise there was no vinegar, lemon, garlic, etc, just herbs!

I recommend everyone must try this recipe.

Instructions

In a medium bowl, toss together the tomatoes, onion, basil and parsley and dress with the EVOO. Season to taste with salt and pepper.

Recipe

- 8 plum tomatoes - seeded, quartered and thinly sliced
- 1 medium red onion, quartered and thinly sliced
- 1 cup fresh basil leaves, cut into thin strips
- 1/2 cup flat-leaf parsley (a couple of generous handfuls), chopped
-1/3 cup extra-virgin olive oil (EVOO), eyeball it
- Coarse salt and freshly ground pepper
