I am obsessed with making pancakes, not eating it but making it. My mother-in-law makes the best pancake that my husband gave it a good thumb up. So I thought maybe I can try to make one to impress him as well.

I tried a lot pancake recipe online but never had one as perfect as the one my mother-in-law’s pancake. The recipes I have previously followed have always been runny and light, never light and fluffy. When you eat it, it is like eating paper. It has always been my endless struggle to find a recipe which can produce the really light and fuffy pancakes.

Finally thanks to Jamie’s recipe! I have the lightest and fluffiest pancakes ever! I will need to compare recipes to find out what Jamie does differently.

This recipe is very straight forward to prepare, so one of these days you can skip the cereals and opt for pancakes for breakfast. Did you know you can eat pancakes for breakfast, lunch and dinner? I know of one 24 hour restaurant in Adelaide, Australia which serves pancakes and only pancakes 24 hours a day, every day!

Instructions

First separate the eggs, putting the whites into one bowl and the yolks into another. Add the flour, baking powder & milk to the egg yolks in a bowl & mix to a smooth thick batter. Whisk the whites with the salt until they form stiff peaks. Fold into the batter - it is now ready to use..

Heat a good non-stick frypan on medium heat. Pour some of the batter into the pan & fry for a couple of minutes until it starts to look goled and firm. At this point sprinkle your chosen flavouring on to the uncooked side before loosening with a spatula and flipping the pancake over. Continue frying until both sides are golden.

You can make these pancakes large or small, to your liking. You can serve them simply doused with maple syrup and even with some butter or creme fraiche.

Recipe

- 3 large eggs
- 115g plain flour
- 1 heaped teaspoon baking powder
- 140ml milk
- a pinch of salt
